Blueberry Breakfast Quesadilla

1 cup fresh blueberries

2 large flour tortillas

1 cup shredded cream cheese (softened)

1/4 cup honey

1 tsp vanilla extract

1/2 tsp ground cinnamon

1/4 cup granola (for crunch)

1 tbsp unsalted butter (for cooking)

Powdered sugar (for garnish, optional)

Fresh mint leaves (for garnish, optional)

Instructions
 

In a mixing bowl, combine the softened cream cheese, honey, vanilla extract, and ground cinnamon. Mix until it's a smooth and creamy consistency.

    Spread half of the cream cheese mixture evenly onto one side of each tortilla.

      Sprinkle fresh blueberries over one of the cream cheese-covered tortillas, then add the granola on top for an added crunch.

        Place the other cream cheese spread tortilla on top of the blueberry-filled one, cream cheese side down.

          In a non-stick skillet, melt the butter over medium heat.

            Carefully place the quesadilla in the skillet. Cook for 3-4 minutes on one side until golden brown and crispy.

              Flip the quesadilla and cook for an additional 3-4 minutes on the other side.

                Once both sides are golden and the center is heated through, remove the quesadilla from the skillet and let it cool slightly.

                  Cut into wedges, and if desired, dust with powdered sugar and garnish with fresh mint leaves.
