Ingredients

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1/4 cup granulated sugar

1 cup buttermilk

1/2 cup unsalted butter, melted

1 cup fresh blueberries (or frozen, if preferred)

Zest of 1 lemon

1 tablespoon lemon juice

1 teaspoon vanilla extract

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a 9x13 inch baking dish with parchment paper or lightly grease it.

Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, salt, and sugar until well combined.

Combine Wet Ingredients: In a separate bowl, mix the buttermilk, melted butter, lemon zest, lemon juice, and vanilla extract until smooth.

Combine Wet and Dry Ingredients: Pour the wet mixture into the dry ingredients and stir gently until just combined. The batter will be thick and lumpy. Do not overmix.

Fold in Blueberries: Gently fold in the blueberries, being careful not to break them apart.

Prepare Butter Swim Mixture: Pour 1/2 cup of melted butter into the bottom of the prepared baking dish. Spoon dollops of the biscuit batter over the butter, allowing the mixture to spread some but not fully combine.

Bake the Biscuits: Place the baking dish in the preheated oven and bake for 20-25 minutes until the edges are golden brown and the center is cooked through.

Cool Slightly and Serve: Allow the biscuits to cool in the pan for 5-10 minutes before serving. They are best served warm!

Optional Topping: For an added touch, you can drizzle a simple glaze made from powdered sugar and lemon juice over the biscuits before serving.
