Blueberry Cake with Lemon Cream Cheese Frosting

2 cups all-purpose flour

1 cup granulated sugar

1/2 cup unsalted butter, softened

2 large eggs

1 cup whole milk

2 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1 tsp vanilla extract

1 1/2 cups fresh blueberries (or frozen, thawed)

For the Lemon Cream Cheese Frosting:

8 oz cream cheese, softened

1/2 cup unsalted butter, softened

3 1/2 cups powdered sugar

Zest of 1 lemon

2 tbsp fresh lemon juice

1/2 tsp vanilla extract

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.

    Combine Dry Ingredients: In a medium bowl, sift together the flour, baking powder, baking soda, and salt. Set aside.

      Cream Butter and Sugar: In a large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.

        Add Eggs and Vanilla: Beat in the eggs, one at a time, ensuring each is fully incorporated. Add the vanilla extract and mix until combined.

          Mix Dry Ingredients and Milk: Gradually add the dry ingredients to the butter mixture, alternating with the milk. Start and end with the flour mixture. Mix until just combined, being careful not to overmix.

            Fold in Blueberries: Gently fold in the blueberries until evenly distributed throughout the batter, taking care not to break them.

              Bake the Cake: Divide the batter equally between the prepared cake pans. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.

                Cool Cakes: Allow the cakes to cool in the pans for 10 minutes, then transfer to wire racks to cool completely.

                  Prepare the Frosting: While the cakes are cooling, prepare the lemon cream cheese frosting. In a medium bowl, beat together the softened cream cheese and butter until smooth and creamy.

                    Add Sugar and Flavorings: Gradually add the powdered sugar, mixing until fully combined. Mix in the lemon zest, lemon juice, and vanilla extract until the frosting is light and fluffy.

                      Assemble the Cake: Once the cakes are completely cool, place one layer on a serving plate. Spread a generous amount of lemon cream cheese frosting on top. Place the second layer over the frosting and spread frosting on the top and the sides of the cake.

                        Decorate: Optionally, garnish with extra blueberries and lemon zest for a pop of color.
