For the Pastry Rings:

1 sheet of puff pastry (thawed)

1 cup fresh blueberries (washed and dried)

1 tablespoon sugar (for sprinkling)

1 egg (beaten, for egg wash)

For the Vanilla Cream Filling:

1 cup heavy whipping cream

½ cup powdered sugar

1 teaspoon vanilla extract

2 tablespoons cream cheese (softened)

For Garnish:

Additional fresh blueberries

Mint leaves (optional)

Prepare the Pastry: Preheat your oven to 400°F (200°C). Roll out the thawed puff pastry on a lightly floured surface. Cut out large circles (about 4 inches in diameter) and then cut smaller circles in the center to create rings.

    Arrange the Rings: Place the pastry rings on a parchment-lined baking sheet. Beat the egg and brush the edges of the pastry with the egg wash to give them a golden color when baked.

      Add Blueberries: Gently press blueberries into the cut-out center of each pastry ring. Sprinkle a little sugar over the blueberries to enhance their sweetness.
