Blueberry Salsa

Ingredients
  

2 cups fresh blueberries, rinsed and drained

1 medium red onion, finely chopped

1 medium jalapeño, seeds removed, finely diced

1 red bell pepper, finely diced

1/4 cup fresh cilantro, chopped

Zest and juice of 1 lime

1 tablespoon honey (or agave syrup for a vegan option)

Salt and pepper, to taste

Instructions
 

In a large mixing bowl, combine the fresh blueberries, diced red onion, jalapeño, and red bell pepper.

    Add the chopped cilantro to the bowl. Make sure all the ingredients are mixed well.

      In a separate small bowl, whisk together the lime zest, lime juice, and honey until well combined.

        Pour this lime-honey mixture over the blueberry mixture. Gently toss to coat all the ingredients without crushing the blueberries.

          Season with salt and pepper to taste, adjusting as necessary.

            Cover the bowl with plastic wrap and let the salsa chill in the refrigerator for at least 30 minutes to allow the flavors to meld together.

              Serve chilled with tortilla chips, grilled chicken, or as a topping for fish tacos!
