400g spaghetti

2 tablespoons olive oil

1 medium onion, finely chopped

2 cloves garlic, minced

1 carrot, finely diced

1 celery stalk, finely diced

500g ground beef (or a mixture of beef and pork)

100ml red wine (optional)

400g canned crushed tomatoes

2 tablespoons tomato paste

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and black pepper to taste

50g grated Parmesan cheese (plus more for serving)

Fresh basil leaves for garnish

Instructions
 

In a large pot, bring salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water.

    While the spaghetti is cooking, heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté for about 3-4 minutes, until translucent.

      Stir in the minced garlic, diced carrot, and celery. Cook for another 3-5 minutes, until the vegetables are softened.

        Increase the heat to medium-high and add the ground beef. Cook until browned, breaking it up with a wooden spoon (about 5-7 minutes).

          If using, pour in the red wine and let it simmer for 2-3 minutes, allowing the alcohol to evaporate.

            Add the crushed tomatoes and tomato paste, and stir to combine. Then sprinkle in the dried oregano, dried basil, salt, and black pepper.

              Reduce the heat to low, cover, and let it simmer for at least 30 minutes (preferably 1 hour) to allow the flavors to meld. If it gets too thick, add a splash of reserved pasta water to loosen.

                Once the sauce is ready, stir in the grated Parmesan cheese. Taste and adjust seasoning if necessary.

                  Combine the spaghetti with the Bolognese sauce in the skillet, tossing to ensure the pasta is evenly coated.

                    Serve hot, topped with additional grated Parmesan cheese and fresh basil leaves for garnish. Enjoy your delightful Bolognese spaghetti!
