Ingredients

For the Crust:

1 ½ cups all-purpose flour

½ cup powdered sugar

¼ teaspoon salt

½ cup unsalted butter, softened

For the Pecan Filling:

1 cup pecans, chopped

½ cup packed brown sugar

½ cup corn syrup

¼ cup bourbon

3 large eggs

1 teaspoon vanilla extract

¼ teaspoon salt

For the Caramel Topping:

½ cup granulated sugar

¼ cup unsalted butter

¼ cup heavy cream

2 tablespoons bourbon

Pinch of salt

Instructions

Prepare the Crust: Preheat your oven to 350°F (175°C). In a medium bowl, combine the flour, powdered sugar, and salt. Add the softened butter and mix until the dough resembles coarse crumbs. Press the mixture evenly into the bottom of a greased 9x9-inch baking dish. Bake for 15 minutes or until lightly golden. Remove from the oven and set aside to cool.

Make the Pecan Filling: In a separate bowl, mix together the chopped pecans, brown sugar, corn syrup, bourbon, eggs, vanilla extract, and salt until well combined. Pour the mixture over the cooled crust, spreading it evenly.

Bake the Filling: Return the dish to the oven and bake for an additional 25-30 minutes, or until the filling is set and slightly puffed. Remove from the oven and allow to cool completely in the pan.

Make the Caramel Topping: In a small saucepan over medium heat, combine the granulated sugar, butter, and a pinch of salt. Cook until the sugar has dissolved and the mixture is bubbling. Carefully stir in the heavy cream and bourbon (the mixture will bubble up). Continue to cook for another 2-3 minutes until slightly thickened. Remove from heat and let cool for a few minutes.

Assemble the Bars: Drizzle the warm bourbon caramel over the cooled pecan filling. Allow the caramel to set for about 15 minutes.

Cut and Serve: Once the caramel is set, slice the bars into squares. For the best results, refrigerate for a while to help them hold their shape before serving.
