Brown Butter Honey Glazed Carrots

1 lb baby carrots (or regular carrots, peeled and sliced)

4 tablespoons unsalted butter

3 tablespoons honey

1 tablespoon freshly squeezed lemon juice

Salt and freshly ground black pepper to taste

Fresh thyme leaves for garnish (optional)

Instructions
 

Prepare the Carrots: If using regular carrots, peel and slice them into uniform pieces, about 1/4 inch thick. If using baby carrots, rinse them well.

    Boil the Carrots: In a medium pot, bring water to a boil and add a pinch of salt. Carefully add the carrots and cook for 5-7 minutes until they are fork-tender but still slightly crisp. Drain the carrots and set aside.

      Brown the Butter: In a large skillet over medium heat, add the unsalted butter. Let it melt, stirring occasionally, until it begins to foam. Continue cooking until the butter turns golden brown and develops a nutty aroma, about 2-3 minutes. Be careful not to let it burn.

        Add the Honey: Once the butter is browned, reduce the heat to low and stir in the honey and lemon juice. Mix well until combined.

          Glaze the Carrots: Add the cooked carrots to the skillet and gently toss them in the brown butter honey mixture. Cook for an additional 2-3 minutes until the carrots are well coated and heated through.

            Season: Season with salt and freshly ground black pepper to taste. Adjust sweetness with more honey if desired.
