For the Brownie Base:

1/2 cup (115g) unsalted butter

1 cup (200g) granulated sugar

2 large eggs

1 tsp vanilla extract

1/3 cup (40g) unsweetened cocoa powder

1/2 cup (65g) all-purpose flour

1/4 tsp salt

1/4 tsp baking powder

For the Cream Cheese Filling:

16 oz (450g) cream cheese, softened

1/2 cup (100g) granulated sugar

2 large eggs

2 tsp vanilla extract

1/4 cup (60ml) sour cream

1/4 cup (60ml) heavy cream

For the Topping (optional):

Chocolate shavings

Fresh berries

Whipped cream

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan and line the bottom with parchment paper.

    Make the Brownie Base:

      - In a medium saucepan, melt the butter over low heat. Once melted, remove from heat and stir in sugar, eggs, and vanilla extract until smooth.

        - Sift in cocoa powder, flour, salt, and baking powder. Mix until just combined.

          - Pour this brownie batter into the prepared springform pan, spreading it evenly with a spatula.

            Bake the Brownie Base: Bake the brownie layer in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs. Remove from the oven and allow to cool slightly while preparing the cream cheese layer.

              Prepare the Cream Cheese Filling:

                - In a mixing bowl, beat the softened cream cheese with granular sugar until smooth and creamy.

                  - Add eggs one at a time, mixing well after each addition. Then, mix in the vanilla extract, sour cream, and heavy cream until smooth and well combined.

                    Assemble the Cheesecake: Once the brownie base has cooled for about 10 minutes, pour the cream cheese filling over the brownie layer. Gently smooth the top with a spatula.

                      Bake the Cheesecake: Reduce the oven temperature to 325°F (160°C) and bake for 50-60 minutes, or until the edges are set but the center still has a slight jiggle. Turn off the oven, crack the oven door and let the cheesecake cool in the oven for about 1 hour.

                        Chill: After removing from the oven, allow it to cool to room temperature before refrigerating it for at least 4 hours, preferably overnight. This will help set the cheesecake perfectly.

                          Serve: Once chilled, carefully run a knife around the edges and remove the sides of the springform pan. Top with chocolate shavings, fresh berries, or whipped cream as desired. Slice and serve!
