12 oz (340g) pasta of your choice (penne, rotini, or farfalle work well)

1 lb (450g) chicken breast, diced

2 cups cherry tomatoes, halved

1 cup fresh basil leaves, chopped

3 cloves garlic, minced

1/2 cup balsamic vinegar

1/2 cup grated Parmesan cheese

1/4 cup olive oil

Salt and black pepper, to taste

Red pepper flakes (optional, for spice)

1 tsp dried oregano

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add pasta and cook according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of the pasta water.

    Sauté the Chicken: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced chicken, season with salt, pepper, and oregano. Cook until the chicken is golden brown and cooked through, about 6-8 minutes. Remove from the pan and set aside.

      Prepare the Bruschetta Mixture: In the same skillet, add another tablespoon of olive oil and heat. Sauté the minced garlic for about 30 seconds until fragrant. Add the halved cherry tomatoes and cook until they begin to soften, about 3-4 minutes.

        Combine Ingredients: While the tomatoes are cooking, return the sautéed chicken to the skillet. Stir in the balsamic vinegar and let cook for another minute, allowing the flavors to combine.

          Mix with Pasta: Add the cooked pasta to the skillet, along with the chopped basil and grated Parmesan cheese. Toss everything together, adding reserved pasta water a little at a time until the pasta is coated and the desired consistency is reached.

            Serve: Remove from heat and adjust seasoning with more salt, pepper, or red pepper flakes if desired. Serve hot, drizzled with a splash of olive oil and additional basil on top.
