Ingredients

2 slices of thick-cut sourdough bread

1 cup cooked, shredded chicken breast

2 tablespoons buffalo sauce (adjust to taste)

1/2 cup shredded cheddar cheese

1/4 cup crumbled blue cheese (optional)

2 tablespoons unsalted butter, softened

1 tablespoon mayonnaise (optional)

Fresh parsley or chives, chopped for garnish (optional)

Instructions

Prepare the Chicken: In a medium bowl, combine the shredded chicken and buffalo sauce. Mix well to ensure the chicken is evenly coated. Adjust the buffalo sauce to your heat preference.

Assemble the Sandwich: Spread softened butter on one side of each slice of sourdough bread. On the unbuttered side of one slice, start layering with shredded cheddar cheese, followed by the buffalo chicken mix, and the crumbled blue cheese if using. Top with another layer of shredded cheddar cheese.

Top and Grill: Place the second slice of sourdough bread on top, buttered side facing out. Preheat a skillet or griddle over medium heat. Carefully place the assembled sandwich in the skillet.

Cook Until Golden: Grill the sandwich for about 4-5 minutes until the bottom is golden and crispy. Flip the sandwich carefully and grill the other side for another 4-5 minutes until the cheese is melted and the bread is golden brown.

Serve: Remove the grilled cheese from the skillet, slice it in half, and let it cool for a minute. If desired, spread mayonnaise on the inside of the bread before serving, and garnish with fresh parsley or chives.

Enjoy: Serve hot with your favorite dipping sauce or alongside celery sticks and ranch dressing for that classic buffalo flavor experience!
