Buffalo Chicken Pizza Pockets

1 lb (450g) cooked chicken, shredded

1/2 cup buffalo sauce (adjust for heat preference)

1 cup shredded mozzarella cheese

1/2 cup blue cheese crumbles (optional)

1/2 cup diced celery (for crunch)

1 tbsp olive oil

1 tsp garlic powder

1 tsp onion powder

1 tsp dried parsley

Salt and pepper, to taste

2 cans of refrigerated pizza dough (or homemade dough)

Cooking spray or additional olive oil, for greasing

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and lightly grease it with cooking spray or olive oil.

    Prepare the Chicken Mixture: In a large mixing bowl, combine the shredded chicken, buffalo sauce, mozzarella cheese, blue cheese (if using), diced celery, garlic powder, onion powder, parsley, salt, and pepper. Mix well until all ingredients are thoroughly coated with the buffalo sauce.

      Roll Out the Dough: Unroll one can of pizza dough on a lightly floured surface. Using a rolling pin, roll it out into a rectangle about 1/4 inch thick. Use a pizza cutter to slice the dough into squares, approximately 4x4 inches.

        Fill the Pizza Pockets: Take a square of dough and add about 2-3 tablespoons of the buffalo chicken mixture to the center. Be careful not to overfill, as this can cause the pockets to break open.

          Seal the Pockets: Fold the dough square over to create a triangle shape. Pinch the edges tightly to seal. For an extra sealer, you can use a fork to crimp the edges.

            Repeat: Repeat the filling and sealing process with the remaining dough and chicken mixture until everything is used.

              Bake the Pizza Pockets: Place the filled pizza pockets on the prepared baking sheet. Brush the tops lightly with olive oil to enhance browning. Bake in the preheated oven for 12-15 minutes or until golden brown and puffed.

                Serve: Remove from the oven and let cool for a few minutes. Serve hot with extra buffalo sauce, ranch, or blue cheese dressing for dipping.
