Buffalo Chicken Sloppy Joe Sliders

1 lb ground chicken

1 cup buffalo sauce (adjust to taste)

1/2 cup yellow onion, finely chopped

2 cloves garlic, minced

1 cup shredded cheddar cheese

1/4 cup cream cheese, softened

1 tablespoon Worcestershire sauce

1 teaspoon smoked paprika

Salt and pepper to taste

For the Sliders:

12 slider buns (Hawaiian or sesame)

Optional toppings: sliced jalapeños, blue cheese crumbles, chopped celery, or ranch dressing

Sauté the Base: In a large skillet over medium heat, add a splash of oil and sauté the chopped onions until translucent, about 3-4 minutes. Add the minced garlic and continue cooking for another minute until fragrant.

    Cook the Chicken: Increase the heat to medium-high and add the ground chicken to the skillet. Season with salt, pepper, and smoked paprika. Cook, breaking it apart with a spoon, until fully cooked and browned, about 5-7 minutes.

      Mix in the Sauces: Reduce the heat to medium, then stir in the buffalo sauce, Worcestershire sauce, and cream cheese. Mix well until the cream cheese has melted and is fully incorporated into the chicken mixture. Add the shredded cheddar cheese and continue to stir until melted and creamy. Remove from heat.

        Prepare the Slider Buns: While the chicken mixture is cooling slightly, preheat your oven to 350°F (175°C). Slice the slider buns in half horizontally and place the bottom halves on a baking sheet.

          Assemble the Sliders: Spoon generous portions of the buffalo chicken mixture onto each bottom slider half. If desired, add optional toppings like sliced jalapeños or blue cheese crumbles. Place the top halves of the buns over the filling.

            Bake: Cover the sliders loosely with aluminum foil and bake in the preheated oven for 10-15 minutes, until heated through. If you like crispy tops, remove the foil for the last 5 minutes of baking.
