1 large butternut squash, peeled and diced

4 strips of crispy bacon, chopped

1 tablespoon olive oil

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon dried thyme

1 pre-made flatbread (store-bought or homemade)

1 cup shredded mozzarella cheese

1/2 cup crumbled goat cheese

1/4 cup balsamic glaze (for drizzling)

Fresh arugula (for garnishing)

Instructions
 

Preheat Oven: Preheat your oven to 425°F (220°C).

    Prepare Butternut Squash: In a large bowl, toss the diced butternut squash with olive oil, salt, black pepper, garlic powder, and dried thyme until evenly coated.

      Bake Squash: Spread the seasoned butternut squash on a baking sheet and roast in the preheated oven for about 25 minutes, or until golden and tender, flipping halfway through cooking.

        Cook Bacon: While the squash roasts, cook the chopped bacon in a skillet over medium heat until crispy. Transfer the bacon to a paper towel-lined plate to drain excess fat.

          Assemble Flatbread: Once the squash is done roasting, take it out of the oven. On a baking sheet or pizza stone, lay out the flatbread. Sprinkle the shredded mozzarella evenly across the flatbread.

            Layer Ingredients: Top the mozzarella with the roasted butternut squash and the crispy bacon. Add crumbled goat cheese over all the ingredients.

              Bake Flatbread: Return the assembled flatbread to the oven and bake for an additional 10-12 minutes, or until the cheese is melted and bubbly.

                Garnish and Serve: Once baked, remove from the oven and drizzle balsamic glaze over the top. Add a handful of fresh arugula for a peppery finish.
