1 small onion, finely chopped

2 cloves garlic, minced

1/4 cup all-purpose flour

4 cups whole milk

2 cups sharp cheddar cheese, shredded

1 cup Gruyère cheese, shredded

1 cup Parmesan cheese, grated

1 lb cooked lobster meat, chopped

1 tsp Dijon mustard

1/2 tsp smoked paprika

Salt and black pepper to taste

1 cup panko breadcrumbs

2 tbsp fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: Boil a large pot of salted water and cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

    Make the Cheese Sauce: In a large saucepan, melt 4 tablespoons of unsalted butter over medium heat. Add the finely chopped onion and sauté until it becomes translucent, about 5 minutes. Stir in the minced garlic and cook for an additional 1–2 minutes.
