Cajun Chicken Alfredo Pasta

8 oz fettuccine pasta

1 lb boneless, skinless chicken breasts

2 tablespoons Cajun seasoning

2 tablespoons olive oil

4 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1 cup spinach (fresh or frozen)

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine pasta and cook according to package instructions until al dente. Drain and set aside.

    Prepare the Chicken: While the pasta cooks, pat the chicken breasts dry with paper towels. Season both sides generously with Cajun seasoning.

      Sear the Chicken: In a large skillet over medium-high heat, add 2 tablespoons of olive oil. Once hot, add the seasoned chicken breasts. Cook for about 6-7 minutes on each side, or until the chicken is cooked through and has a nice golden-brown crust. Remove the chicken from the skillet and let it rest for a few minutes before slicing it into strips.

        Make the Alfredo Sauce: In the same skillet (don’t clean it out), add minced garlic and sauté for about 1 minute until fragrant. Pour in the heavy cream, stirring continuously. Bring to a gentle simmer and allow it to thicken slightly, about 3-4 minutes.

          Add Cheese and Spinach: Lower the heat and stir in the grated Parmesan cheese until melted and smooth. Add the spinach and cook just until wilted (if using fresh), about 2-3 minutes. Season with salt and pepper to taste.

            Combine Pasta and Sauce: Add the drained fettuccine pasta to the skillet with the Alfredo sauce. Toss gently to coat the pasta evenly. If the sauce is too thick, you can add a splash of pasta water to reach your desired consistency.

              Serve and Garnish: Plate the creamy Cajun chicken Alfredo pasta, top it with the sliced Cajun chicken, and garnish with chopped fresh parsley.
