Ingredients
  

1 lb smoked sausage, sliced (andouille preferred)

1 lb chicken breast, diced

1 medium onion, diced

1 bell pepper, diced

2 cloves garlic, minced

1 cup celery, chopped

1 can (14.5 oz) diced tomatoes with green chilies

2 cups chicken broth

1 lb penne pasta

2 tbsp Cajun seasoning (adjust to taste)

1 tsp thyme

1 tsp oregano

Salt and pepper to taste

2 tbsp olive oil

1 cup green onions, sliced (for garnish)

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot or Dutch oven, heat the olive oil over medium heat. Add the smoked sausage and cook until browned, about 5 minutes.

    Add the diced chicken breast, seasoning with salt and pepper, and cook until browned and cooked through, about 7-10 minutes.

      Stir in the onion, bell pepper, celery, and garlic. Sauté until the vegetables are tender, about 5 minutes.

        Add in the Cajun seasoning, thyme, and oregano, stirring to combine. Cook for 1 more minute to release the flavors.

          Pour in the diced tomatoes with their juices and the chicken broth. Bring the mixture to a boil.

            Once boiling, add the penne pasta and stir well. Reduce the heat to low, cover, and let it simmer for about 15-20 minutes, until the pasta is al dente, stirring occasionally to prevent sticking.

              Taste and adjust seasoning if necessary. If needed, add more broth for a creamier texture.

                Remove from heat and let it sit for a few minutes. Serve hot, garnished with sliced green onions and fresh parsley.
