4 bone-in, skin-on chicken thighs

1/2 cup fresh lemon juice (about 2-3 lemons)

Zest of 1 lemon

1/4 cup honey

2 tablespoons soy sauce

2 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon paprika

Fresh parsley, chopped (for garnish)

Lemon slices (for garnish)

Instructions
 

Marinate the Chicken: In a large bowl, whisk together the lemon juice, lemon zest, honey, soy sauce, olive oil, minced garlic, grated ginger, salt, pepper, and paprika. Place the chicken thighs in the bowl, ensuring they are well-coated in the marinade. Cover with plastic wrap and refrigerate for at least 1 hour (or up to overnight for deeper flavor).

    Preheat the Oven: Preheat your oven to 400°F (200°C).

      Bake the Chicken: Remove the chicken thighs from the marinade, allowing excess liquid to drip off (reserve the marinade for later). Place the chicken, skin side up, on a baking sheet lined with parchment paper or in a greased oven-safe dish.

        Glaze the Chicken: Drizzle half of the reserved marinade over the chicken thighs. Bake in the preheated oven for 25 minutes.

          Candify the Chicken: After 25 minutes, take the chicken out and baste it with the remaining marinade. Return to the oven and bake for an additional 15-20 minutes, or until the chicken is cooked through and the skin is golden and caramelized (internal temperature should reach 165°F or 75°C).

            Garnish and Serve: Once done, remove from the oven and let the chicken rest for 5 minutes. Garnish with freshly chopped parsley and lemon slices before serving.
