Ingredients

2 medium-sized Granny Smith apples

1 cup granulated sugar

1/2 cup unsalted butter

1 cup light corn syrup

1 tsp vanilla extract

1/2 tsp salt

1 cup crushed nuts (peanuts, almonds, or walnuts) for coating

1 cup chocolate chips (optional for drizzling)

Small wooden sticks or toothpicks

Instructions

Prepare the Apples: Begin by washing the apples thoroughly and drying them with a clean towel. Cut the apples into bite-sized wedges, removing the core. Insert a wooden stick or toothpick into the bottom of each apple wedge.

Make the Caramel: In a medium saucepan over medium heat, combine the granulated sugar, butter, light corn syrup, and salt. Stir continuously until the mixture comes to a boil. Once boiling, stop stirring and allow it to simmer for about 5-7 minutes, or until it reaches a golden caramel color. Be sure to monitor it closely to avoid burning.

Add Vanilla: Remove the saucepan from the heat and carefully stir in the vanilla extract.

Coat the Apple Bites: Dip each apple wedge into the warm caramel, allowing the excess to drip off. Then, roll or sprinkle the caramel-covered apple bites in crushed nuts for added texture and flavor.

Set and Drizzle: Place the caramel-coated apple bites on a parchment-lined baking sheet. If desired, melt the chocolate chips in the microwave, then drizzle it over the caramel apples using a fork or piping bag for a decorative touch.

Cool: Allow the apple bites to sit at room temperature or in the refrigerator until the caramel hardens slightly and the chocolate sets.

Serve: Enjoy your delicious caramel apple bites as a sweet treat! Store any leftovers in an airtight container in the fridge for up to three days.
