2 ripe peaches, sliced

1/2 cup brown sugar

4 tablespoons unsalted butter

1 teaspoon vanilla extract

Pinch of salt

For the pancake batter:

1 cup all-purpose flour

2 tablespoons granulated sugar

2 teaspoons baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup buttermilk

1 large egg

2 tablespoons melted butter

1 teaspoon vanilla extract

Cooking spray or additional butter for the pan

Prepare the caramel topping: In a medium skillet over medium heat, melt the butter. Add the brown sugar, vanilla extract, and a pinch of salt, stirring until well combined and the sugar is dissolved. This should take about 2-3 minutes. Add the sliced peaches and cook for an additional 2-3 minutes until they begin to soften. Remove from heat and set aside.

    Make the pancake batter: In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt. In another bowl, combine the buttermilk, egg, melted butter, and vanilla extract. Pour the wet ingredients into the dry ingredients and mix gently until just combined.
