1 lb ground beef (80/20 blend)

1 cup shredded gouda cheese

2 large onions, thinly sliced

2 tbsp olive oil

2 tbsp unsalted butter

1 tbsp brown sugar

1 tsp salt

1/2 tsp black pepper

4 burger buns

Fresh arugula or spinach for topping

Mustard or your choice of condiments (optional)

Instructions
 

Caramelize the Onions: In a large skillet, heat the olive oil and butter over medium heat. Add the thinly sliced onions and sprinkle with salt. Cook for 15-20 minutes, stirring occasionally until the onions become soft and golden brown. Stir in the brown sugar and cook for an additional 2-3 minutes to enhance sweetness. Set aside to cool.

    Prepare the Burger Patties: In a mixing bowl, combine the ground beef, black pepper, and a pinch of salt. Mix until just combined. Divide the meat into 8 equal portions.

      Stuff the Burgers: Take one portion of the meat and flatten it into a thin patty. Place a generous tablespoon of the caramelized onions and a tablespoon of shredded gouda in the center. Top with another patty, sealing the edges carefully to ensure the filling doesn’t spill out. Repeat with the remaining portions.

        Cook the Burgers: Preheat your grill or a skillet over medium-high heat. Once hot, add the stuffed patties. Cook for 4-5 minutes on one side, then flip and cook for an additional 4-5 minutes for medium doneness. In the last minute of cooking, place a slice of additional gouda on top of each burger to melt slightly.

          Assemble Your Burger: Toast the burger buns lightly on the skillet or grill. Place the cooked burger patty on the bottom half of the bun, top with fresh arugula, and add mustard or your choice of condiments. Add the top bun.
