12 large cremini mushrooms, stems removed

2 tablespoons olive oil

1 medium onion, finely chopped

2 cloves garlic, minced

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

½ cup breadcrumbs (Panko recommended for extra crunch)

¾ cup Gruyère cheese, grated

2 tablespoons fresh parsley, chopped

Salt and pepper to taste

Balsamic glaze (for drizzling, optional)

Prep the Mushrooms: Preheat your oven to 375°F (190°C). Gently clean the mushrooms with a damp cloth and carefully remove the stems. Set the caps aside and chop the stems finely.

    Caramelize the Onions: In a medium skillet, heat the olive oil over medium heat. Add the chopped onions and garlic, and sauté for about 10-12 minutes, stirring occasionally, until the onions are golden and caramelized. Add the chopped mushroom stems and thyme, cooking for an additional 3-4 minutes until everything is well blended. Season with salt and pepper to taste.

      Prepare the Filling: In a bowl, combine the caramelized onion mixture with breadcrumbs, half of the Gruyère cheese, and the chopped parsley. Mix well to create a cohesive stuffing.

        Stuff the Mushrooms: Take each mushroom cap and spoon the filling generously into each, pressing down lightly to ensure it’s packed in. Place the stuffed mushrooms on a lined baking sheet.

          Top with Cheese: Sprinkle the remaining Gruyère cheese on top of each stuffed mushroom for a deliciously melty topping.

            Bake: Place the baking sheet in the preheated oven and bake for about 20-25 minutes, or until the mushrooms are tender and the cheese is bubbling and golden.
