1 sheet of puff pastry (thawed if frozen)

3 large onions (sweet or yellow), thinly sliced

2 tablespoons olive oil

2 tablespoons unsalted butter

1 teaspoon sugar

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

1 cup Gruyère cheese, grated

2 large eggs

1/2 cup heavy cream

Salt and pepper to taste

Fresh parsley (for garnish, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Caramelize the Onions: In a large skillet, heat the olive oil and butter over medium heat. Add the sliced onions and sprinkle them with sugar. Cook, stirring frequently, until the onions are soft and golden brown, about 25-30 minutes. Stir in the thyme and season with salt and pepper. Set aside to cool slightly.

      Prepare the Puff Pastry: On a lightly floured surface, roll out the puff pastry to fit your tart pan (approximately 10 inches in diameter). Gently transfer the pastry to the pan, pressing it into the edges and trimming any excess. Prick the bottom with a fork to prevent it from puffing up during baking.

        Pre-bake the Pastry: Place the tart shell in the preheated oven and bake for about 10-12 minutes until lightly golden. Remove from oven and set aside.

          Assemble the Tart: In a bowl, whisk together the eggs and heavy cream until well combined. Stir in the caramelized onions and half of the grated Gruyère cheese. Pour this mixture into the pre-baked tart shell and spread it evenly.

            Add the Cheese: Sprinkle the remaining Gruyère cheese generously over the top of the onion mixture.

              Bake the Tart: Return the tart to the oven and bake for an additional 25-30 minutes, or until the top is golden brown and the center is set.

                Cool and Serve: Once baked, allow the tart to cool for a few minutes before slicing. Garnish with fresh parsley if desired. Serve warm or at room temperature.
