1 sheet of puff pastry (thawed if frozen)

3 large onions (preferably yellow or sweet)

2 tablespoons olive oil

1 tablespoon unsalted butter

1 teaspoon sugar

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

1 cup grated Gruyère cheese

2 large eggs

1 cup heavy cream

Salt and pepper to taste

Fresh chives (for garnish, optional)

Instructions
 

Preheat the Oven: Start by preheating your oven to 400°F (200°C).

    Prepare the Onions: Thinly slice the onions. In a large skillet, heat the olive oil and butter over medium heat. Add the onions and a pinch of salt, stirring to coat.

      Caramelize the Onions: Cook the onions slowly, stirring occasionally, for about 20-25 minutes until they are soft and golden brown. Sprinkle the sugar and thyme, and continue to cook for another 5 minutes until the onions are deeply caramelized. Remove from heat and set aside to cool slightly.

        Prepare the Tart Shell: Roll out the puff pastry on a lightly floured surface to fit a 9-inch tart pan with a removable bottom. Carefully transfer the pastry to the pan, pressing it into the edges. Trim any excess pastry hanging over the edges. Prick the bottom with a fork to prevent puffing.

          Layer the Ingredients: Sprinkle half of the Gruyère cheese evenly over the bottom of the tart shell. Spoon the caramelized onions over the cheese and then top with the remaining Gruyère.

            Make the Custard Mixture: In a medium bowl, whisk together the eggs and heavy cream until fully combined. Season with salt and pepper. Pour the custard mixture evenly over the tart filling.

              Bake the Tart: Place the tart in the preheated oven and bake for 30-35 minutes, or until the custard is set and the top is golden brown.

                Cool and Serve: Once baked, allow the tart to cool for about 10 minutes. Remove from the tart pan, garnish with fresh chives if desired, and slice into wedges. Serve warm or at room temperature.
