Ingredients

8 oz pasta (penne or rigatoni)

1 cup mixed charcuterie (sliced salami, pepperoni, prosciutto)

1 cup cheese (mozzarella, parmesan, and goat cheese blend)

1/2 cup olives (black and green, pitted and sliced)

1 cup cherry tomatoes (halved)

1/2 cup roasted red peppers (chopped)

1/2 cup cream cheese (softened)

1/2 cup sour cream

1/4 cup pesto

2 cloves garlic (minced)

1 teaspoon dried oregano

1 teaspoon red pepper flakes (optional for heat)

Salt and pepper to taste

Fresh basil leaves for garnish

Instructions

Preheat the Oven: Begin by preheating your oven to 375°F (190°C).

Cook the Pasta: In a large pot, bring salted water to a boil and cook the pasta according to the package instructions until al dente. Drain and set aside.

Prepare the Charcuterie Mix: In a large mixing bowl, combine the sliced charcuterie, cream cheese, sour cream, pesto, minced garlic, dried oregano, red pepper flakes, and chopped roasted red peppers. Mix until all ingredients are well incorporated.

Add the Pasta: Gently fold the cooked pasta into the charcuterie mixture, ensuring all pasta is coated.

Incorporate Vegetables: Add in the halved cherry tomatoes and sliced olives, mixing gently so you don’t break the tomatoes.

Cheese It Up: Fold in half of the cheese blend (mozzarella, parmesan, and goat cheese) until evenly distributed.

Transfer to Baking Dish: Pour the pasta mixture into a greased baking dish (about 9x13 inches or equivalent), spreading it evenly.

Top with Cheese: Sprinkle the remaining cheese blend generously over the top of the pasta.

Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the cheese is bubbly and golden brown.

Garnish and Serve: Once done, remove from the oven and let it cool for a few minutes. Garnish with fresh basil leaves before serving.
