1 cup all-purpose flour

1 cup shredded sharp cheddar cheese

1/2 cup cornmeal

2 large eggs

1 cup buttermilk

1/4 cup vegetable oil

1-2 fresh jalapeños, diced (seeds removed for less heat)

1 tablespoon baking powder

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

Optional: chopped chives or green onions for garnish

Preheat the Waffle Maker: Preheat your waffle maker according to the manufacturer's instructions. If you have a mini waffle maker, ensure it’s ready for use.

    Mix Dry Ingredients: In a large mixing bowl, combine the all-purpose flour, cornmeal, baking powder, garlic powder, onion powder, salt, and black pepper. Whisk together until well mixed.

      Prepare Wet Ingredients: In a separate bowl, whisk together the eggs, buttermilk, and vegetable oil until combined.

        Combine Mixtures: Pour the wet mixture into the dry ingredients, stirring gently until just combined. Be careful not to overmix; it's okay if the batter is a bit lumpy.

          Add Cheese & Jalapeños: Fold in the shredded cheddar cheese and diced jalapeños until evenly dispersed throughout the batter.

            Cook the Waffles: Lightly grease the waffle maker with non-stick spray or brush with oil. Pour about 1/4 to 1/3 cup of batter onto the preheated waffle maker, depending on its size. Close the lid and cook for about 3-5 minutes, or until the waffles are golden brown and crispy.
