1 medium head of cauliflower, cut into bite-sized florets

1 cup shredded sharp cheddar cheese

1/2 cup grated Parmesan cheese

1/2 cup breadcrumbs (panko preferred for extra crunch)

2 large eggs

1 teaspoon garlic powder

1/2 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon black pepper

1 teaspoon salt

2 tablespoons fresh parsley, chopped (for garnish)

Optional: chili flakes for added heat

Preheat the Oven: Begin by preheating your oven to 400°F (200°C) and line a baking sheet with parchment paper or a silicone baking mat.

    Blanch the Cauliflower: In a large pot, bring salted water to a boil. Add the cauliflower florets and blanch for about 3-4 minutes until slightly tender. Drain and let them cool to room temperature.

      Prepare the Mixture: In a large bowl, combine the blanched cauliflower, cheddar cheese, Parmesan cheese, breadcrumbs, eggs, garlic powder, onion powder, smoked paprika, black pepper, and salt. Mix until everything is well incorporated.

        Form the Bites: Using your hands, take small amounts of the mixture and form bite-sized balls or patties. Aim for about 1.5 inches in diameter for even cooking.

          Bake: Place the formed bites onto the prepared baking sheet, spacing them about one inch apart. Bake in the preheated oven for 20-25 minutes, or until they are golden brown and crispy on the outside.
