2 cups cooked and shredded chicken

2 cups broccoli florets (fresh or frozen)

1 cup long-grain white rice (uncooked)

3 cups chicken broth

1 cup sharp cheddar cheese, shredded

1 cup cream of chicken soup

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon black pepper

1/2 teaspoon salt

1/4 teaspoon paprika

1 cup mozzarella cheese, shredded

1/2 cup breadcrumbs (optional)

2 tablespoons olive oil

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C).

    Prepare Broccoli: If using fresh broccoli, steam the florets until bright green and tender but still firm, about 3-4 minutes. If using frozen, simply thaw them.

      Cook Rice: In a medium saucepan, combine the uncooked rice and chicken broth. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15-20 minutes until the rice is cooked and has absorbed all the broth.

        Mix Ingredients: In a large mixing bowl, combine cooked rice, shredded chicken, steamed broccoli, cream of chicken soup, half of the cheddar cheese, garlic powder, onion powder, black pepper, salt, and paprika. Stir until everything is well mixed.

          Transfer to Casserole Dish: Grease a 9x13-inch casserole dish with olive oil. Pour the mixture evenly into the dish.

            Top with Cheese: Sprinkle the remaining cheddar cheese and mozzarella cheese evenly over the top. If desired, add breadcrumbs for a crunchy topping.

              Bake: Bake in the preheated oven for 25-30 minutes or until the cheese is bubbly and slightly golden brown on top.

                Let it Cool: Remove from the oven and let it cool for 5-10 minutes before serving. This allows the casserole to set and makes it easier to serve.
