2 cans (15 oz each) whole corn, drained

1 can (15 oz) cream-style corn

1 cup sour cream

1 stick (1/2 cup) unsalted butter, melted

1 cup shredded sharp cheddar cheese (plus more for topping)

1 cup Jiffy corn muffin mix

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt

1/2 teaspoon black pepper

1/2 cup chopped green onions (optional, for garnish)

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Grease a 9x13 inch baking dish with cooking spray or butter.

    Mix Wet Ingredients: In a large mixing bowl, combine the drained whole corn, cream-style corn, sour cream, and melted butter. Stir until well blended.

      Incorporate Cheese and Mix: Add the shredded cheddar cheese, Jiffy corn muffin mix, garlic powder, onion powder, salt, and black pepper to the bowl. Mix until all ingredients are well incorporated, but be careful not to overmix.

        Transfer to Baking Dish: Pour the corn mixture into the prepared baking dish and spread it evenly across the bottom.

          Add Cheese Topping: Sprinkle an additional 1/2 cup of shredded cheddar cheese over the top of the casserole to achieve that cheesy crust.

            Bake: Place the casserole in the preheated oven and bake for 40-45 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
