Ingredients

2 cups all-purpose flour

1 tablespoon sugar

1 packet (2 1/4 teaspoons) instant yeast

1 teaspoon salt

1 cup warm water (110°F)

2 tablespoons olive oil (plus more for greasing)

4 tablespoons unsalted butter, melted

3 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried parsley

2 cups shredded mozzarella cheese

1/2 cup grated Parmesan cheese

Optional: Crushed red pepper flakes for serving

Instructions

Prepare the Dough:

In a large mixing bowl, combine the warm water, sugar, and instant yeast. Let it sit for about 5 minutes until frothy. Then, add the olive oil, salt, and half of the flour. Stir until combined. Gradually add the remaining flour, kneading until a smooth, elastic dough forms (about 5 minutes).

      First Rise:

Lightly grease a bowl with olive oil, place the dough inside, and cover it with a clean towel. Allow it to rise in a warm area for about 30-45 minutes or until it doubles in size.

          Prepare the Garlic Butter:

While the dough is rising, melt the 4 tablespoons of butter in a small saucepan over low heat. Add minced garlic, oregano, and dried parsley. Stir and cook for about 2 minutes until fragrant, then remove from heat and set aside.

              Shape the Breadsticks:

Preheat your oven to 450°F (230°C). Once the dough has risen, punch it down and transfer it to a lightly floured surface. Roll it out into a rectangle (about 12x8 inches). Transfer the rolled dough onto a greased baking sheet.

                  Add the Toppings:

Brush the dough generously with the garlic butter mixture, ensuring to cover the entire surface. Sprinkle half of the shredded mozzarella cheese evenly over the top. Using a pizza cutter or a sharp knife, cut the dough into strips (about 1 inch wide).

                      Final Rising:

Allow the cut breadsticks to rise for an additional 10-15 minutes while the oven finishes preheating.

                          Bake:

After the final rise, bake the breadsticks in the preheated oven for 10-12 minutes, or until they are golden brown and crispy.

                              Add Final Toppings:

As soon as the breadsticks come out of the oven, sprinkle the remaining mozzarella and Parmesan cheese on top. Return to the oven for an additional 2-3 minutes, just until the cheese is melted and bubbly.

                                  Serve:

Remove the cheesy garlic breadsticks from the oven, brush with any remaining garlic butter, and dust with crushed red pepper flakes if desired. Cut fully into strips and serve hot.
