Cheesy Garlic Chicken Wraps

2 large boneless, skinless chicken breasts

4 large flour tortillas

1 cup shredded mozzarella cheese

1 cup shredded cheddar cheese

4 tablespoons garlic butter (melted)

2 teaspoons Italian seasoning

1 teaspoon paprika

Salt and pepper, to taste

1 cup fresh spinach leaves

1 small red bell pepper, sliced

1 small yellow onion, sliced

Olive oil, for cooking

Fresh parsley, for garnish (optional)

Instructions
 

Prepare the Chicken:

    - Season the chicken breasts with salt, pepper, Italian seasoning, and paprika. Ensure they are evenly coated.

      Cook the Chicken:

        - In a skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the chicken breasts and cook for about 6-7 minutes on each side or until fully cooked and no longer pink in the center. Once cooked, remove from the skillet and let them rest for a few minutes before slicing them into thin strips.

          Sauté Vegetables:

            - In the same skillet, add the sliced onion and red bell pepper. Sauté for about 5 minutes until they are softened. Then add in the fresh spinach and cook until wilted, approximately 2 minutes. Remove from heat.

              Assemble the Wraps:

                - Lay out the tortillas on a flat surface. Brush each tortilla with a generous tablespoon of melted garlic butter.

                  - Divide the sliced chicken evenly among the tortillas, placing it in the center. Top with the sautéed vegetables and sprinkle the mozzarella and cheddar cheese evenly over each wrap.

                    Fold and Grill:

                      - Fold the sides of the tortilla over the filling, then roll from the bottom up to form a tight wrap.

                        - Heat a clean skillet or grill over medium heat. Place the wraps seam-side down and grill for about 3-4 minutes on each side until the tortillas are golden brown and the cheese is melted.

                          Serve:

                            - Remove from heat and let the wraps rest for a minute. Slice in half and garnish with fresh parsley, if desired. Serve warm with your favorite dipping sauce or a side salad.
