1 pound ground beef

1 medium onion, diced

1 bell pepper (any color), diced

3 cloves garlic, minced

1 can (15 oz) diced tomatoes with green chilies

1 cup uncooked elbow macaroni

2 cups beef broth

1 teaspoon Italian seasoning

Salt and pepper to taste

2 cups shredded cheddar cheese

1 cup sour cream

1 cup frozen mixed vegetables (peas, carrots, corn)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C).

    Cook Beef: In a large skillet over medium heat, cook the ground beef until browned. Drain any excess fat.

      Sauté Vegetables: Add the diced onion, bell pepper, and minced garlic to the skillet. Sauté until the vegetables are tender, about 5 minutes.

        Combine Ingredients: Stir in the can of diced tomatoes (with juices), uncooked elbow macaroni, beef broth, Italian seasoning, salt, and pepper. Bring the mixture to a simmer.

          Add Vegetables: Mix in the frozen mixed vegetables and sour cream, stirring to combine everything evenly.

            Transfer to Casserole Dish: Pour the mixture into a greased 9x13 inch casserole dish. Spread it out evenly.

              Add Cheese: Sprinkle the shredded cheddar cheese generously on top of the casserole.

                Bake: Cover the dish with foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden brown.

                  Garnish and Serve: Once baked, let it cool for a couple of minutes. Garnish with freshly chopped parsley before serving.
