1 lb ground beef

1 medium onion, diced

2 cloves garlic, minced

4 medium potatoes, peeled and diced

4 cups beef broth

1 cup milk (or heavy cream for a richer taste)

1 cup shredded cheddar cheese

1 cup frozen corn (optional)

1 tsp paprika

1 tsp dried thyme

Salt and pepper to taste

2 tbsp olive oil

Fresh parsley or chives for garnish (optional)

Instructions
 

Cook the Beef: In a large pot or Dutch oven, heat olive oil over medium heat. Add the ground beef and cook until browned. Drain any excess grease and set the beef aside.

    Sauté the Aromatics: In the same pot, add the diced onion and garlic. Sauté until the onion becomes translucent, about 3-4 minutes.

      Add Potatoes and Seasonings: Stir in the diced potatoes, paprika, dried thyme, salt, and pepper. Cook for another 2-3 minutes to combine the flavors.

        Pour in Broth: Add the beef broth to the pot. Bring the mixture to a boil, then reduce the heat to a simmer. Allow it to cook until the potatoes are tender, about 15-20 minutes.

          Combine with Beef: Once the potatoes are soft, return the cooked ground beef to the pot. Stir to combine.

            Make it Creamy: Stir in the milk (or heavy cream) and let it simmer for an additional 5 minutes.

              Add Cheese and Corn: Gradually add the shredded cheddar cheese to the soup, stirring constantly until melted and smooth. If using, stir in the frozen corn at this point.

                Taste and Adjust: Check for seasoning and adjust with more salt and pepper, if necessary.
