Ingredients
  

1 ½ lbs ground beef

1 cup breadcrumbs

1/2 cup shredded cheddar cheese

1/2 cup grated Parmesan cheese

1/2 cup milk

1/4 cup ketchup

1/4 cup chopped fresh parsley

1 tablespoon Worcestershire sauce

1 tablespoon Dijon mustard

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

1 cup diced bell peppers (red, green, or yellow)

1 cup diced onions

1 cup frozen mixed vegetables (peas, corn, and carrots)

1 cup shredded mozzarella cheese

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C).

    Mix Meatloaf Base: In a large bowl, combine the ground beef, breadcrumbs, shredded cheddar cheese, milk, ketchup, parsley, Worcestershire sauce, Dijon mustard, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix well until all ingredients are incorporated.

      Prepare Casserole Dish: Lightly grease a large casserole dish (9x13 inches) or line it with parchment paper for easy removal.

        Layer Vegetable Base: Spread the diced bell peppers, onions, and frozen mixed vegetables evenly at the bottom of the casserole dish.

          Form Meatloaf Layer: Spoon the meatloaf mixture over the vegetables in the casserole dish and spread it out evenly. You can use a spatula to pat it down for an even layer.

            Bake: Place the casserole dish in the preheated oven and bake for approximately 45 minutes, or until the meatloaf is cooked through and reaches an internal temperature of 160°F (70°C).

              Add Mozzarella Topping: Remove the casserole from the oven and sprinkle the shredded mozzarella cheese evenly over the top. Return to the oven and bake for an additional 10-15 minutes, until the cheese is bubbly and golden.

                Cool & Serve: Once done, let the casserole cool for about 5-10 minutes before slicing. Serve hot with a sprinkle of extra parsley if desired.
