Ingredients

1 lb (450g) ground beef

4 medium russet potatoes, diced

1 medium onion, chopped

3 cloves garlic, minced

2 cups beef broth

1 cup shredded cheddar cheese

1 cup frozen mixed vegetables (peas and carrots work great)

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon dried thyme

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Sauté the Aromatics: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion becomes translucent, about 3-4 minutes.

Brown the Beef: Add the ground beef to the pot. Season with salt, pepper, smoked paprika, and thyme. Cook, breaking it apart with a wooden spoon, until browned and cooked through, about 5-7 minutes.

Add Potatoes: Stir in the diced potatoes, mixing them well with the beef and onions. Allow the potatoes to cook for 2-3 minutes to slightly soften.

Pour in the Broth: Add the beef broth to the pot, ensuring it covers the beef and potatoes. Bring the mixture to a gentle boil.

Cook the Ingredients: Once boiling, reduce the heat to low, cover the pot, and let it simmer for 15-20 minutes, or until the potatoes are tender and the liquid has reduced slightly.

Stir in the Veggies: After the cooking time, add the frozen mixed vegetables to the pot and stir well. Cover and let it cook for an additional 5 minutes.

Add the Cheese: Remove the pot from heat and sprinkle the shredded cheddar cheese over the top. Cover the pot again for a few minutes, allowing the cheese to melt into a gooey delicious layer.

Serve and Garnish: Fluff the cheesy mixture with a spatula, then serve warm. Garnish with fresh parsley for a beautiful presentation.
