Ingredients
  

1 lb ground beef

1 cup breadcrumbs

1/2 cup shredded cheddar cheese

1/2 cup diced provolone cheese

1 medium onion, finely chopped

1 medium green bell pepper, finely chopped

1 medium red bell pepper, finely chopped

2 cloves garlic, minced

2 large eggs

1 tbsp Worcestershire sauce

1 tsp Italian seasoning

1 tsp salt

1/2 tsp black pepper

1/4 cup milk

1/2 cup ketchup (for topping)

Optional: sliced jalapeños for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Sauté Vegetables: In a skillet over medium heat, add a splash of olive oil and sauté the onions, green bell pepper, and red bell pepper until they are soft and the onions are translucent, about 5-7 minutes. Add the minced garlic and sauté for an additional minute. Remove from heat and let cool slightly.

      Mix the Meatloaf Mixture: In a large mixing bowl, combine the ground beef, sautéed vegetables, breadcrumbs, cheddar cheese, provolone cheese, Worcestershire sauce, Italian seasoning, salt, pepper, milk, and eggs. Mix until just combined; do not overmix, as this can make the meatloaf tough.

        Shape the Loaf: Transfer the meat mixture to a baking sheet lined with parchment paper. Shape it into a loaf, about 10 inches long and 4 inches wide.

          Add Ketchup Topping: Spread the ketchup over the top of the meatloaf evenly.

            Bake: Place the meatloaf in the preheated oven and bake for 50-60 minutes, or until the internal temperature reaches 160°F (71°C). Optionally, broil for the last 5 minutes to caramelize the ketchup topping.

              Rest: Once done, remove the meatloaf from the oven and let it rest for 10 minutes before slicing.

                Serve: Serve warm, garnished with optional sliced jalapeños for an extra kick. Pair it with mashed potatoes or a simple salad.
