Cheesy Spinach Artichoke Pasta Bake

12 oz pasta (cavatappi or penne work well)

1 cup fresh spinach, chopped

1 can (14 oz) artichoke hearts, drained and chopped

1 cup ricotta cheese

1 cup cream cheese, softened

1 cup mozzarella cheese, shredded

½ cup grated Parmesan cheese

2 cups milk

3 cloves garlic, minced

1 tsp onion powder

1 tsp garlic powder

½ tsp salt

½ tsp black pepper

1 tsp red pepper flakes (optional)

½ cup breadcrumbs (for topping)

2 tbsp olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish with a bit of olive oil or cooking spray.

    Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Drain and set aside.

      Prepare the Cheese Mixture: In a large mixing bowl, combine the ricotta cheese, cream cheese, ½ cup of shredded mozzarella cheese, ¼ cup of grated Parmesan cheese, garlic, onion powder, garlic powder, salt, pepper, and red pepper flakes (if using). Mix until smooth and well combined.

        Mix in Spinach and Artichokes: Gently fold in the chopped spinach and artichoke hearts into the cheese mixture until evenly distributed.

          Combine Pasta and Cheese Mix: Add the drained pasta to the cheese mixture, followed by the milk. Stir gently until everything is well coated.

            Transfer to Baking Dish: Pour the entire pasta and cheese mixture into the prepared baking dish, spreading it out evenly.

              Top the Bake: In a small bowl, mix the remaining shredded mozzarella cheese, grated Parmesan cheese, and breadcrumbs with the olive oil until combined. Sprinkle this mixture evenly over the pasta.

                Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the cheese is bubbly and the top is golden brown.

                  Garnish and Serve: Remove from the oven and let it sit for about 5 minutes. Garnish with freshly chopped parsley before serving.
