Cheesy Spinach Stuffed Chicken Breasts

4 boneless, skinless chicken breasts

2 cups fresh spinach, chopped

1 cup cream cheese, softened

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

2 cloves garlic, minced

1 teaspoon onion powder

½ teaspoon salt

½ teaspoon black pepper

¼ teaspoon red pepper flakes (optional)

2 tablespoons olive oil

1 tablespoon fresh lemon juice

Fresh parsley, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Filling: In a large bowl, combine the chopped spinach, cream cheese, mozzarella cheese, Parmesan cheese, garlic, onion powder, salt, pepper, and red pepper flakes (if using). Mix until well combined and set aside.

      Prepare the Chicken: Pat the chicken breasts dry with paper towels. Using a sharp knife, make a pocket in each breast by cutting a slit along the side but not all the way through.

        Stuff the Chicken: Take a generous amount of the spinach and cheese mixture and fill each chicken pocket. Use toothpicks to secure the openings and prevent the filling from spilling out.

          Sear the Chicken: In a large oven-safe skillet, heat olive oil over medium-high heat. Once hot, add the stuffed chicken breasts and sear for about 3-4 minutes per side, until they are golden brown.

            Bake the Chicken: Once both sides are seared, drizzle the chicken with lemon juice and transfer the skillet to the preheated oven. Bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).

              Rest and Serve: Remove the skillet from the oven and allow the chicken to rest for 5 minutes. Carefully remove the toothpicks, garnish with fresh parsley if desired, and serve hot.
