4 large flour tortillas

1 cup shredded mozzarella cheese

1 cup shredded cheddar cheese

1 bell pepper (red or yellow), diced

1 small zucchini, diced

1 cup fresh spinach, chopped

1 small red onion, finely chopped

1 cup canned black beans, rinsed and drained

2 tablespoons olive oil

1 teaspoon ground cumin

1 teaspoon chili powder

Salt and pepper, to taste

1 avocado, sliced (for serving)

Salsa (optional, for serving)

Sour cream (optional, for serving)

Instructions
 

Prepare the Veggies: In a large skillet, heat the olive oil over medium heat. Add the diced bell pepper, zucchini, red onion, and cook for about 5-7 minutes until softened. Stir in the chopped spinach, black beans, cumin, chili powder, salt, and pepper, cooking for another 2-3 minutes until the spinach is wilted. Remove from heat and set aside.

    Layer the Quesadillas: On a clean surface, lay one flour tortilla down. Sprinkle a layer of mozzarella on half of the tortilla, followed by a generous amount of the veggie mixture, and then top with a layer of cheddar cheese. Fold the tortilla in half to create a half-moon shape.

      Cook the Quesadillas: Heat a non-stick skillet over medium heat. Lightly coat with a bit of oil if necessary. Place one quesadilla in the skillet and cook for about 3-4 minutes on each side, or until golden brown and crispy, and the cheese is melted. Remove from skillet and repeat with the remaining tortillas and filling.

        Stack It Up: Once all quesadillas are cooked, cut each one into wedges. Stack the wedges on a serving platter, alternating with some of the remaining veggie filling or additional cheeses for a fun layered look.
