Ingredients

1 cup fresh or frozen cherries, pitted and roughly chopped

1 cup granulated sugar

1/4 cup unsweetened cocoa powder

1 cup powdered sugar

1/2 cup creamy peanut butter

1/2 teaspoon vanilla extract

1/4 teaspoon salt

1 cup semi-sweet chocolate chips (for coating)

Instructions

Prepare the Cherry Mixture: In a medium saucepan over medium heat, combine the chopped cherries and granulated sugar. Cook, stirring occasionally, until the cherries break down and the sugar dissolves, approximately 5-7 minutes. Remove from heat and let cool slightly.

Mix Cocoa and Peanut Butter: In a separate bowl, combine the cocoa powder, powdered sugar, peanut butter, vanilla extract, and salt. Mix until smooth and well blended.

Combine Cherry and Peanut Butter Mixture: Fold the cooled cherry mixture into the peanut butter cocoa mixture. Stir until fully incorporated and you have a thick, sticky mixture.

Shape the Candy: Lightly grease your hands and shape the mixture into small balls, about 1 inch in diameter. Place them on a parchment-lined baking sheet.

Chill the Mixture: Refrigerate the shaped balls for at least 30 minutes, or until firm.

Prepare the Chocolate Coating: Melt the chocolate chips in a microwave-safe bowl or over a double boiler, stirring until smooth. Remove from heat and let cool for a few minutes.

Coat the Candy: Dip each chilled candy ball into the melted chocolate, ensuring they are fully coated. Return them to the parchment-lined sheet.

Set the Coating: Allow the chocolate coating to set at room temperature or place the tray in the refrigerator for about 15-20 minutes until the chocolate hardens.

Serve and Enjoy: Once the chocolate is firm, your Cherry Mash Candies are ready to be enjoyed! Store any leftovers in an airtight container in the refrigerator.
