Chicken Alfredo Pasta Bake

12 oz penne pasta

2 cups cooked chicken, shredded or cubed

3 cups broccoli florets (fresh or frozen)

2 cups Alfredo sauce (store-bought or homemade)

1 cup grated Parmesan cheese

1 cup shredded mozzarella cheese

1 tsp garlic powder

1 tsp Italian seasoning

Salt and pepper to taste

1 cup breadcrumbs (optional for topping)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the oven: Preheat your oven to 375°F (190°C).

    Cook the pasta: In a large pot of boiling salted water, cook the penne pasta according to package instructions until al dente, then drain and set aside.

      Prepare the chicken and broccoli: If using fresh broccoli, blanch it in boiling water for 2-3 minutes until bright green and tender-crisp. Drain and set aside. If using frozen broccoli, simply thaw and drain any excess water.

        Mix the ingredients: In a large mixing bowl, combine the cooked pasta, shredded chicken, broccoli, Alfredo sauce, half of the Parmesan cheese, garlic powder, Italian seasoning, and a pinch of salt and pepper. Mix until all ingredients are well combined.

          Transfer to baking dish: Grease a 9x13 inch baking dish with cooking spray or olive oil. Pour the pasta mixture into the baking dish, spreading it out evenly.

            Add cheese topping: Sprinkle the remaining Parmesan cheese and the mozzarella cheese over the top of the pasta mixture. If desired, sprinkle breadcrumbs evenly on top for added crunch.

              Bake: Cover with aluminum foil and bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden brown.

                Garnish and serve: Once out of the oven, let it cool for a few minutes. Garnish with fresh chopped parsley before serving.
