2 boneless, skinless chicken breasts

1 cup breadcrumbs (preferably Italian-style)

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons olive oil

4 large flour tortillas

1 cup shredded mozzarella cheese

1 cup marinara sauce (for dipping)

Fresh basil leaves (for garnish)

Prep the Chicken: Preheat your oven to 400°F (200°C). Season the chicken breasts with salt, pepper, garlic powder, and oregano.

    Bread the Chicken: In a shallow dish, combine breadcrumbs and grated Parmesan cheese. Dredge each chicken breast in the breadcrumb mixture until fully coated.

      Cook the Chicken: Heat olive oil in a skillet over medium heat. Cook the chicken for about 4-5 minutes on each side until golden brown and cooked through. Transfer to a baking dish and bake in the preheated oven for an additional 10 minutes. Once done, let it cool, then chop into bite-sized pieces.

        Assemble the Quesadillas: Lay one tortilla on a clean, flat surface. Sprinkle half of the shredded mozzarella cheese on half of the tortilla. Layer the chopped chicken on top, then add the remaining mozzarella cheese, and fold the tortilla over.

          Cook the Quesadilla: In a clean skillet over medium heat, add a small amount of olive oil. Once heated, place the folded quesadilla in the skillet. Cook for about 3-4 minutes on each side or until the tortilla is golden brown and the cheese is melted. Repeat with the remaining tortillas.

            Serve: Cut the quesadillas into wedges and serve with marinara sauce for dipping. Garnish with fresh basil leaves for an extra touch of flavor.
