Chicken, Spinach, and Artichoke Lasagna

9 lasagna noodles

2 cups cooked chicken, shredded

1 tablespoon olive oil

3 cups fresh spinach, chopped

1 cup artichoke hearts, drained and chopped (canned or frozen)

2 cloves garlic, minced

1 cup ricotta cheese

1 cup cream cheese, softened

2 cups mozzarella cheese, shredded (divided)

1 cup parmesan cheese, grated (divided)

1 teaspoon Italian seasoning

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional for heat)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Lasagna Noodles: In a large pot of salted boiling water, cook the lasagna noodles according to package instructions until al dente. Drain and set aside.

      Sauté the Spinach and Garlic: In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Add chopped spinach and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.

        Prepare the Cheese Mixture: In a large bowl, combine the ricotta cheese, softened cream cheese, half of the mozzarella cheese, half of the parmesan cheese, Italian seasoning, salt, black pepper, and red pepper flakes (if using). Mix well until creamy and smooth.

          Assemble the Lasagna:

            - Spread a thin layer of the cheese mixture on the bottom of a 9x13 inch baking dish.

              - Place 3 lasagna noodles on top.

                - Spread half of the creamy cheese mixture over the noodles.

                  - Layer half of the shredded chicken and half of the sautéed spinach mixture over the cheese.

                    - Add half of the chopped artichokes.

                      - Repeat the layers: noodles, cheese mixture, chicken, spinach, and artichokes.

                        - Top with the final layer of noodles, the remaining cheese mixture, the remaining mozzarella, and the remaining parmesan.

                          Bake the Lasagna: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the top is golden and bubbly.

                            Rest and Serve: Allow the lasagna to rest for 10 minutes before slicing. Garnish with freshly chopped parsley before serving.
