For the Chicken:

1 lb boneless, skinless chicken thighs

2 tbsp olive oil

2 tsp chili powder

1 tsp cumin

1 tsp garlic powder

1/2 tsp smoked paprika

Salt and pepper to taste

Juice of 1 lime

For the Strawberry Slaw:

2 cups shredded green cabbage

1 cup fresh strawberries, hulled and sliced

1/4 cup red onion, thinly sliced

1/4 cup cilantro, chopped

2 tbsp apple cider vinegar

1 tbsp honey or agave syrup

Salt and pepper to taste

For Serving:

8 small corn or flour tortillas

Lime wedges

Fresh avocado, sliced (optional)

Feta cheese or queso fresco (optional)

Instructions
 

Marinate the Chicken:

    - In a large bowl, combine olive oil, chili powder, cumin, garlic powder, smoked paprika, salt, pepper, and lime juice. Add the chicken thighs and coat them well. Allow to marinate for at least 30 minutes or up to 2 hours for deeper flavor.

      Prepare the Strawberry Slaw:

        - In a medium bowl, mix shredded cabbage, strawberry slices, red onion, and cilantro.

          - In a small bowl, whisk together apple cider vinegar, honey, salt, and pepper. Pour dressing over the slaw and toss to combine. Set aside for the flavors to meld while you cook the chicken.

            Cook the Chicken:
