1 sheet of frozen puff pastry (thawed)

1 cup shredded sharp cheddar cheese

1/2 cup cooked ground beef or turkey (optional)

1/4 cup diced green chilies (canned or fresh)

1/4 cup finely chopped onion

1 clove garlic, minced

1 tablespoon taco seasoning

1 egg (beaten, for egg wash)

1 tablespoon olive oil

Salt and pepper to taste

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Sauté Aromatics: In a skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sautéing until the onion is translucent (about 3-4 minutes).

      Mix Filling: In a mixing bowl, combine cooked ground beef or turkey (if using), shredded cheddar cheese, diced green chilies, sautéed onion and garlic, taco seasoning, salt, and pepper. Mix until well combined.

        Prepare Puff Pastry: On a lightly floured surface, roll out the thawed puff pastry sheet to smooth it out. Cut it into 2-inch squares.

          Fill Pastry Bites: Place a teaspoon-sized amount of the filling mixture in the center of each puff pastry square. Fold the corners of the squares to the center to create a pocket and pinch the edges to seal tightly.

            Egg Wash: Place the filled puff pastry bites on the prepared baking sheet. Brush each bite lightly with the beaten egg for a golden finish.

              Bake: Bake in the preheated oven for 15-20 minutes or until puffed and golden brown.
