1 pound large shrimp, peeled and deveined

1 tablespoon olive oil

1 teaspoon chili powder

1/2 teaspoon cumin

1/2 teaspoon smoked paprika

Zest and juice of 2 limes

Salt and pepper to taste

24 wonton wrappers

Cooking spray or additional olive oil for brushing

1/2 cup cream cheese, softened

1/4 cup cilantro, finely chopped

1 avocado, diced

Lime wedges for serving

Instructions
 

Prepare the Shrimp:

    - In a medium bowl, combine the shrimp, olive oil, chili powder, cumin, smoked paprika, lime zest, lime juice, salt, and pepper. Toss until the shrimp are evenly coated. Let marinate for about 15 minutes.

      Bake the Wonton Cups:

        - Preheat your oven to 375°F (190°C).

          - Lightly grease a standard muffin tin with cooking spray or olive oil.

            - Gently press each wonton wrapper into the muffin tin cups, creating small cups. Brush the tops lightly with additional olive oil.

              - Bake in the preheated oven for 8-10 minutes or until the edges are golden and crispy. Remove from the oven and let cool.

                Cook the Shrimp:

                  - In a skillet over medium heat, add the marinated shrimp. Cook for about 2-3 minutes per side or until they turn pink and opaque. Remove from heat and let them cool slightly.

                    Prepare the Filling:

                      - In a small bowl, mix the softened cream cheese with chopped cilantro until smooth. You can add a pinch of lime juice for extra zest, if desired.

                        Assemble the Cups:

                          - Once the wonton cups have cooled, spoon a layer of the cream cheese mixture into each cup.

                            - Top with a few pieces of cooked shrimp and a sprinkle of diced avocado.

                              Serve:
