Ingredients
  

1 lb ground beef (or turkey for a lighter version)

1 medium onion, diced

2 cloves garlic, minced

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (14.5 oz) diced tomatoes

2 cups beef broth (or vegetable broth)

1 tablespoon chili powder

1 teaspoon cumin

1/2 teaspoon paprika

Salt and pepper to taste

2 cups elbow macaroni

2 cups shredded sharp cheddar cheese

1/2 cup sour cream (optional for serving)

Fresh cilantro, chopped (for garnish)

Instructions
 

In a large pot or Dutch oven, brown the ground beef over medium heat until fully cooked, about 5-7 minutes. Drain excess fat if necessary.

    Add the diced onion and minced garlic to the pot, cooking until the onion is translucent, about 3-4 minutes.

      Stir in the kidney beans, black beans, diced tomatoes (with juice), beef broth, chili powder, cumin, paprika, salt, and pepper. Bring the mixture to a simmer.

        Once simmering, add in the elbow macaroni. Cover and cook for about 8-10 minutes, or until the pasta is al dente, stirring occasionally to prevent sticking.

          Reduce heat to low, and gradually stir in 1.5 cups of the shredded cheddar cheese until melted and creamy throughout the chili mac.

            Remove from heat and let sit for a couple of minutes to thicken slightly.

              Serve hot, topped with the remaining cheddar cheese, a dollop of sour cream, and garnish with chopped cilantro.
