For the Chimichurri Sauce:

1 cup fresh parsley, finely chopped

1/2 cup fresh cilantro, finely chopped

4 cloves garlic, minced

1/2 teaspoon red pepper flakes (adjust to taste)

1/2 cup extra virgin olive oil

2 tablespoons red wine vinegar

Juice of 1 lemon

Salt and pepper to taste

For the Steak:

1 lb flank steak or skirt steak

2 tablespoons olive oil

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 teaspoon garlic powder

Salt and pepper to taste

For Assembling:

8 small corn or flour tortillas

1 cup shredded cabbage (purple or green)

1 avocado, sliced

1/2 cup crumbled feta cheese (optional)

Lime wedges, for serving

Instructions
 

Make the Chimichurri Sauce:

    In a medium bowl, combine the chopped parsley, cilantro, minced garlic, and red pepper flakes. Stir in the olive oil, red wine vinegar, and lemon juice. Season with salt and pepper to taste. Mix well and set aside to let the flavors meld.

      Prepare the Steak:

        In a small bowl, mix together the olive oil, ground cumin, smoked paprika, garlic powder, salt, and pepper. Rub this mixture all over the steak and let it marinate for at least 30 minutes (or up to 4 hours for deeper flavor) in the refrigerator.

          Cook the Steak:

            Preheat your grill or a cast-iron skillet over medium-high heat. Once hot, add the marinated steak. Cook for about 4-5 minutes on each side for medium-rare (adjust time for your preferred doneness). Remove from heat and let it rest for about 5 minutes before slicing.

              Slice the Steak:

                Once rested, slice the steak against the grain into thin strips.

                  Assemble the Tacos:
