1 lb boneless, skinless chicken thighs, cut into bite-sized pieces

1/2 cup cornstarch

1/2 cup all-purpose flour

2 large eggs, beaten

Oil for frying

For the sauce:

1/2 cup soy sauce

1/4 cup honey

2 tbsp rice vinegar

1 tbsp sesame oil

2 cloves garlic, minced

1-inch piece ginger, grated

1 tsp red pepper flakes (adjust to taste)

2 tbsp toasted sesame seeds

3 green onions, chopped (for garnish)

Instructions
 

Prepare the chicken: In a bowl, mix the cornstarch and flour. Dip each piece of chicken into the egg and then dredge it in the cornstarch-flour mixture, pressing gently to cover well.

    Fry the chicken: In a large skillet or wok, heat about 1 inch of oil over medium-high heat. Once hot, carefully add the chicken pieces in batches, frying until golden brown and crispy (about 4-5 minutes per side). Remove and drain on paper towels.

      Make the sauce: In a separate saucepan over medium heat, combine the soy sauce, honey, rice vinegar, sesame oil, garlic, ginger, and red pepper flakes. Stir well and bring to a gentle simmer for about 5-7 minutes until the sauce thickens slightly.
