Instructions

Prepare the Churro Dough:

    - In a medium saucepan, combine water, butter, 1 tablespoon sugar, and salt. Bring to a boil over medium heat.

      - Once boiling, remove from heat and stir in the flour and cocoa powder until a dough forms.

        - Allow the mixture to cool slightly, then add eggs one at a time, mixing until fully incorporated after each addition. Stir in vanilla extract.

          Shape and Fry the Churros:

            - Heat oil in a deep skillet to 375°F (190°C).

              - Transfer the churro dough to a piping bag fitted with a star tip.

                - Pipe long strips of dough into the hot oil, cutting them to your desired length (about 5-6 inches is recommended).

                  - Fry until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.

                    Coat the Churros:

                      - In a shallow bowl, mix 1 cup granulated sugar with 1 teaspoon cinnamon. Roll the hot churros in the mixture until thoroughly coated.

                        Prepare the Ice Cream Filling:

                          - In a bowl, mix the softened vanilla ice cream with chocolate chips, if using. Place in the freezer for about 30 minutes to firm up slightly.

                            Assemble the Ice Cream Sandwiches:

                              - Take one churro and scoop a generous amount of the ice cream mixture on top. Place another churro on top to form a sandwich. Repeat until you have as many sandwiches as desired.

                                Make the Chocolate Drizzle:

                                  - In a microwave-safe bowl, combine the semi-sweet chocolate chips and coconut oil. Heat in 30-second intervals, stirring until melted and smooth.

                                    Serve:

                                      - Drizzle the melted chocolate over the churro ice cream sandwiches. Serve immediately or wrap in parchment paper and freeze for later enjoyment.
